CCM® Reader Recipe Contest
October 2009
We were delighted that Bill and Patty Carpenter, owners of Corner View Restaurant in San Luis Obispo, agreed to host our second CCM® Reader Recipe Contest. Home chefs from around the region wrote up the instructions for their favorite original dishes, which Chef Matthew Beckett tested in the restaurant’s kitchen. After much deliberation (and extra sampling of course), four readers were selected as winners in the categories of appetizer, entrée, dessert, and cocktail. The lucky local cooks not only receive the gratification of seeing their delicious cuisine on the pages of CCM®, but also a $100 Corner View gift certificate. Plus, each of the award-winning dishes has been added to the restaurant’s menu for the month of October. Eager to try one of these tempting new treats (or all four)? Give in! Appetizer Winner - Pesto Bruschetta

A classic Italian appetizer: French baguette slices are covered with a basil, garlic, and Romano cheese pesto spread and topped with ripe Roma tomatoes and olive oil.
Cocktail Winner - Fresh Basil Mojito

A great variation on the traditional mojito, this cocktail combines fresh basil leaves, rum, and lime juice with a splash of club soda.
Entrée Winner - Poulet et Chevre

Tender chicken breasts are fi lled with a fresh spinach, sundried tomatoes, and chèvre, and coated in a mixture of Herbs de Provence and Japanese breadcrumbs.
Dessert - Triple Berry Crisp

Delicate, fresh, yet extremely indulgent, this dessert combines four types of berries and rhubarb enveloped by a warm cinnamon, brown sugar, and oat crisp.
