Sweeter and less
acidic than a traditional table orange,
blood oranges are also prized for
their deep reddish/purple pigment.
They are an ideal dessert citrus,
as we found out from Tim Kilcoyne
who prepared a Blood Orange and Kishu
Creamsicle Tart. At Villa Creek,
Tom Fundaro created this excellent
date and blood orange tart.
